I watched the show. Yes, Matt did cut off the tip of his finger and they couldn't find it. If Gordon Ramsey ate it, they didn't show it or mention it on the show. Is the show edited for content? Will Mr. Ramsey become vegetarian? Stay tuned :-)

he didnt eat it?! if you actually watch the show after Matt leaves he asks the ladies where the thumb is and they realize its cooking in the sautee pan with the rest of the panchetta. so in the end they have to end up discarding the panchetta. some people i tell you are just idiots!

I watched the show and they threw out the pancetta. The chefs did a complete cleanup of the station and redid the dish without the fingertip.

But the real story then is...I believe the challenge was to make different dishes using all, but only, the 20 ingredients provided. The addition of the finger in this dish means they used 21 and must lose by default to the other team.
And, wanna' bet that if it was on Top Chef...Tom C would have complained it lacked salt?

Well, actually, they didn't use the veal so the thumb makes the ingredient count 20. LOL Too bad it wasn't an "approved" ingredient.

Now, isn't that just like the tabloids? I watched the show also and he knew full well the thumb tip might be in the pancetta. Somebody's just trying to sell some extra papers.
