Superstitions about baking and roasting account for much energy wastage in the modern kitchen. "Preheat your oven" is an old wives tale that, with perhaps a few exceptions, can be ignored in the interest of energy saving.

    Whoever wrote this article puts up a good bluster, but offers absolutely no proof except talk. Never even tried it out themselves, and whines because "it's not macho enough" to be a subject on "Mythbusters."

    The comment about there MAY be some credence to it if you're cooking a souflee--JUST MAYBE, pretty much screams "I am an idiot and don't really have any evidence to back any of this up."

    I wouldn't recommend not preheating for souflees, bread, cake, muffins, or anything resembling any of those things, unless you're willing to experiment and adjust your cooking times accordingly. Anything that needs to rise will not react properly. Or, anything that requires you to start at a higher temp like 450 and then turn it down, in order to sear the outside of the meat.

    Besides, I'd like to hear just how much energy is being saved by reducing the quality of my baked and roasted goods.
